GIN FIZZ

INGREDIENTS:
2oz of Port of Entry Gin
1/2oz of Lemon Juice
1/2oz of Lime Juice
1oz of Heavy Cream
1oz of Simple Syrup
1 Egg White
3 drops of Orange Blossom Water (If desired)
1 ½ oz of very cold soda water

METHOD:
Add everything but the soda to a shaker with no ice. Shake for 10-15 seconds. Add 4 ice cubes and shake again until fully dissolved. Pour 1oz chilled soda into a chilled glass. Fill to rim with chilled cocktail place back in the fridge. Let settle then top with remaining soda and cocktail foam.

GARNISH:
Express Orange peel on foam.
