Wilmington’s first legally produced Bourbon since prohibition. Small batch-"barrel to barrel" whiskey, carefully crafted using quality grains from River Bend Malt in Western NC. The temperature variations that naturally occur through the season within the distillery helped to develop deep characteristic of the whiskey within.

We are proud to collaborate with Riverbend Malt House in Asheville, NC, for our malted grains, including our signature rye. Riverbend is a leader in craft malting, and their dedication to local sourcing and innovation perfectly complements our commitment to quality and authenticity. Together, we create spirits that reflect the heart of North Carolina.

MASH & FERMENTATION

Our spirits are made using time-honored techniques that bring out the best in every grain. We begin with open-top fermentation, a method that allows native yeast and bacteria to naturally interact with the mash. This process creates more complexity and depth in every sip.

We then distill on-the-grain, a traditional technique where the grains stay in the mash during distillation. This allows us to capture more of the rich, natural flavors that define our spirits.

CRAFTED TO PERFECTION

Each step of our process is carried out with the utmost attention to detail. Our mash tun gives us complete control over the conversion of starches to sugars, setting the stage for a clean and flavorful fermentation.

Once the fermentation is complete, the fermenters ensure the ideal environment for creating robust flavors. Finally, our pot still, designed for slow and precise distillation, preserves the character of the grains and creates spirits that are as rich and complex as the land they come from.

LOCALLY SOURCED GRAIN

At End of Days Distillery, we believe great spirits start with great ingredients. That’s why we work closely with a local North Carolina farmer to grow all of ournon-GMO corn. This ensures a pure, sustainable foundation for our spirits. For special releases, we occasionally useheritage-style corn, which brings unique, traditional flavors to the table, elevating our craft to a new level.

SMALL BATCH BOURBON

Survivor’s Cut Bourbon is a tribute to timeless craftsmanship and bold character. We use traditional open-top fermentation, allowing native and ambient yeast strains to impart unique complexity and a sense of place in every batch. Our on-the-grain distillation method captures the full spectrum of grain flavors—preserving the depth and richness that define a bold, honest bourbon.

The mash bill features 68% Corn, 2-Row Malted Barley, and is finished with either Rye or Wheat depending on the batch, offering subtle but distinct variations in spice and softness across different releases. This thoughtful mash profile creates a robust foundation, with corn bringing sweetness, malted barley lending structure and smoothness, and the final grain contributing either warmth and spice (rye) or a rounded, mellow finish (wheat).

We age Survivor’s Cut in new #3 char American Oak barrels for over five years, allowing the spirit to mature slowly and develop deep layers of flavor. The #3 char draws out sweet vanillin and toasted caramel notes from the wood, while the extended aging contributes balance, complexity, and a long, satisfying finish. Bottled at a bold yet balanced proof, Survivor’s Cut preserves the integrity of traditional bourbon while delivering a uniquely smooth and expressive experience.

TASTING NOTES:

Color: Deep amber, a reflection of its time spent in #3 char American Oak barrels.

Nose: Aromas of warm, fresh-baked bread rise from the glass, layered with sweet notes of vanilla, caramelized sugar, and toasted oak. Hints of dried fruit and a subtle spice tease what's to come.

Palate: Rich and well-rounded with a full-bodied texture. Flavors of vanilla, caramel, and warm oak lead the way, followed by spicy rye notes that add structure and complexity without overpowering the inherent sweetness of the corn. The unfiltered nature of this whiskey preserves the deeper grain and barrel flavors, delivering a robust, authentic sip.

Finish: Long and satisfying with an appropriate “chew”—a lingering taste and aroma that invites contemplation and appreciation. Notes of charred wood, vanilla, and a touch of leather remain on the palate, making every sip memorable.
