Survivor’s Cut Series Rye Whiskey is made using 65% rye, 18% wheat, and 17% 2-row barley. The time in the barrel has allowed the spirit to develop a rich, smooth, spice finish, with deep caramel color. ⁣

The quality of the grains and the love and care used in the distillation and maturation process show our continued commitment to the craft. The original barrels used to age this spirit were made by Black Water Cooperage which will not be producing additional barrels in the future.

We are proud to collaborate with Riverbend Malt House in Asheville, NC, for our malted grains, including our signature rye. Riverbend is a leader in craft malting, and their dedication to local sourcing and innovation perfectly complements our commitment to quality and authenticity. Together, we create spirits that reflect the heart of North Carolina.

MASH & FERMENTATION

Our spirits are made using time-honored techniques that bring out the best in every grain. We begin with open-top fermentation, a method that allows native yeast and bacteria to naturally interact with the mash. This process creates more complexity and depth in every sip.

We then distill on-the-grain, a traditional technique where the grains stay in the mash during distillation. This allows us to capture more of the rich, natural flavors that define our spirits.

CRAFTED TO PERFECTION

Each step of our process is carried out with the utmost attention to detail. Our mash tun gives us complete control over the conversion of starches to sugars, setting the stage for a clean and flavorful fermentation.

Once the fermentation is complete, the fermenters ensure the ideal environment for creating robust flavors. Finally, our pot still, designed for slow and precise distillation, preserves the character of the grains and creates spirits that are as rich and complex as the land they come from.

LOCALLY SOURCED GRAIN

At End of Days Distillery, we believe great spirits start with great ingredients. That’s why we work closely with a local North Carolina farmer to grow all of our non-GMO corn. This ensures a pure, sustainable foundation for our spirits. For special releases, we occasionally use heritage-style corn, which brings unique, traditional flavors to the table, elevating our craft to a new level.

SMALL BATCH RYE

Survivor’s Cut Rye is a bold yet approachable whiskey crafted using traditional methods that honor the legacy of American rye. We begin with open-top fermentation, allowing natural and ambient yeast strains to bring complexity and a sense of place to each batch. Our on-the-grain distillation captures the full depth of grain flavor, producing a textured, full-bodied spirit.

The mash bill is thoughtfully designed with 65% rye, 18% wheat, and 17% 2-row malted barley. This balanced profile makes it an entry-level rye, intentionally smoother and more accessible than high-rye whiskeys (typically 95–100% rye). The rye contributes classic spice, while the wheat softens the edges with a silky, rounded sweetness. The malted barley enhances fermentation and provides structure and depth.

Survivor’s Cut Rye is bottled unfiltered to preserve its natural complexity. The result is a whiskey with character and finesse—equally suited for sipping neat or elevating a cocktail.

TASTING NOTES:

Color: Deep mahogany with golden amber highlights, reflecting the influence of new American oak barrels and rich grain character.

Nose: Inviting and layered with aromas of fresh rye bread, soft baking spices, and honeyed oak, supported by hints of orange zest, vanilla, and subtle herbal notes.

Palate: Warm and balanced. The rye brings forward cracked pepper, cinnamon, and clove, while the wheat softens the spice with gentle sweetness and a creamy texture. Malted barley adds structure and a slight nutty richness. The unfiltered nature of this whiskey allows all the grain and barrel character to shine through.

Finish: Long and dry with a satisfying “chew”—a lingering combination of oak, spice, toasted grain, and caramel. The finish invites another sip and rewards slow savoring.
